Dijon is a French city, 315 km SE of Paris, known for its vineyards and especially for its mustards. Unlike the well-known ”mustard-based dressings", Dijon mustards do not contain starch, starch or equivalents, being made only from yellow and brown seeds, vinegar, wine, spices, little salt and sugar. The mustard plant, with yellow flowers, of the cruciferous family, is about 1.2 to 1.5 meters tall, and in its pods, chauchas or silicuas contains from 5 to 8 seeds. Its yield per hectare ranges from 1200 to 1800 kg and its sowing-harvesting cycle is equal to that of wheat.
