Merengo is the oldest pottery factory in the country, having existed since 1851.
Hermenegildo Zuviría, opened, at the beginning of the year 1852, an office of refreshing drinks and factory of alfajores and sweets at the corner of the streets of the Cabildo and San Jerónimo, next to the place where the Constituent Congress worked. It was a confectionery-bar, where custom invited to go for a few drinks and chat. As they say, there were two very famous places at that time that were the meeting points of the Santafesina society on hot summer nights. One was the local Merengo, and the other was the aljibe de las Zavallas.
Hermenegildo Zuviría, was nicknamed Merengo perhaps because when wearing the white aprons he looked like a meringue.
