Vacalin's Reggianito or Parmesan cheese is a ripened cheese that is obtained by coagulation of milk by rennet, complemented by the action of lactic acid bacteria-specific low moisture and fat with a hard consistency, compact texture, crumbly and grainy. Its color is yellowish-white, salty in taste and slightly spicy with a characteristic odor.
