Brie is a soft cheese made of semi-parked cow's milk, soft and aromatic, the texture is grainy when it is fresh and creamy when ripe, its delicate edible crust is thin and moldy (Penicillium candida) of white color, somewhat velvety, has a mild flavor, with a subtle aroma of mold and fresh mushroom although sometimes a fruity and nutty aroma is perceived. The paste of the interior is pale, ivory or light yellow, to the touch the texture is unctuous and creamy. It comes in triangular portions.
