Sage is the herb, derived from the Salvia plant's dried leaves, and it is often used for infusions like teas, or as a spice and also as an ornamental plant. This plant is native to the Mediterranean region though it has been naturalized in many places throughout the world.

In Italian cooking it is an important seasoning for saltimbocca as well as other dishes. In British and American cooking, it is traditionally served as sage and onion stuffing, which accompanies roast turkey or chicken at Christmas or Thanksgiving.
It is also grown in Europe in order to get its essencial oil.
