Beetroot is the large and fleshy root that grows on the plant of the same name and is consumed as a vegetable, whose scientific or Latin name is Beta vulgaris, the red being the most consumed in the West. In Latin American countries, it is also called betabel, beteraba, beetroot and beterraga. It belongs to the Chenopodiaceae family, like spinach and chard. Beetroot is a vegetable low in fat, rich in fiber, and with a high content of B vitamins, although it also contains vitamins A and C. It also contains carotenoids and minerals such as calcium, magnesium, phosphorus, potassium, sodium, zinc and copper.
Sugar beet is a white and elongated tuber that is cultivated for the production of sugar due to its high sucrose content, being the second largest source of sugar in the world, after sugar cane. It is common to find it in Mediterranean diets, since its origin is in Italy, throughout southern Europe and North Africa.
