General
The Chardonnay in sight has a variable color between very pale straw and straw yellow more pronounced, almost golden, which in many cases is due to the contribution of the wood, and greenish reflections, which are defined by the variety used.
The characteristic aromas Chardonnay wines has nuances of apple, pineapple, yellow melon and stone fruit. These are dry and full-bodied white wines and, due to the aging in oak barrels (usually American) and its malolactic fermentation, will often have shades of cream, butter and nuts. If the aging of Chardonnay has been on lees, we can also find yogurt flavors and a lot of creaminess. Among the best pairings with Chardonnay, we find that it combines great with chicken dishes with mustard sauce, seafood cakes or quiches.
The Chardonnay tastes long in the mouth, has no hard ends or an aggressive acidity. It presents a wide range of flavors which are defined by apples, citrus, melon, pears, honey, wax, caramel, dulce de leche, minerals among the most recognized.
