Use these oils instead of solid fats (such as butter, hydrogenated oils, lard and stick margarine) and tropical oils (such as palm and coconut oils), which can contain a lot of saturated fat.

  • Canola oil: is oil made from crushed canola seeds. One of the best oils for heart health, canola oil has less saturated fat than any other oil commonly used in the U.S. Cutting down on saturated fats helps cut your cholesterol levels.
  • Maize: is oil extracted from the germ of corn (maize). Its main use is in cooking, where its high smoke point makes refined corn oil a valuable frying oil. It is also a key ingredient in some margarines.
  • Olive: Olive oil is a liquid fat obtained from olives (the fruit of Olea europaea; family Oleaceae), a traditional tree crop of the Mediterranean Basin, produced by pressing whole olives and extracting the oil. It is commonly used in cooking: for frying foods or as a salad dressing.
  • Peanuts: is the oil from the seed of the peanut. Peanut oil is used in cooking and is also used to make medicine. Peanut oil is high in monounsaturated "good" fat and low in saturated "bad" fat. This is believed to help prevent heart disease and lower cholesterol.
  • Safflower: is the edible version of pressed seeds of the plant. As a thick liquid, it's similar in composition to vegetable oil. It's commonly used in cooking and medicine, though it may also be used on your skin. Safflower oilis also used as a carrier oil for other essential oils.
  • Soy: Soybean oil is a vegetable oil extracted from the seeds of the soybean: (Glycine max). It is one of the most widely consumed cooking oils and the second most consumed vegetable oil. As a drying oil, processed soybean oil is also used as a base for printing inks (soy ink) and oil paints.
  • Sunflower: sunflower is light in taste and apperarance and supplies more Vitamin E than any other vegetable oil. It is a combination of monounsaturated and polyunsaturated fats with low saturated fat levels. The versatility of this healthy oil is recognized by cooks internationally.

Mixtures or combinations of these oils, which are often sold under the name “vegetable oil”, and cooking sprays made from these oils are also good options. Some special oils, such as avocado, grape seed, rice germ and sesame, can be healthy options, although they are usually more expensive or difficult to find.

Some oils may have distinctive flavors, so try different types to find out which ones you like. In addition, some oils are better for certain types of cooking than others, so it may be advisable to have several types in your pantry.
