Provolone is the name of an Italian cheese that is made out of cow milk. It is a great companion for red wines and it can be served together with hot chutneys, bread and, of course, pasta.
Provolone cheese is a semi-hard all-purpose cheese, with a light color and a firm and fibrous texture, and a mild and smoky flavor, which can be cut without crumbling and when aged, is suitable for grating. It has practically no holes and its taste can vary from mild to strong and spicy, depending on the time of ripening. The crust is hard, but thin, bright yellow and slightly smoky.
It is available to buy in cheese shops throughout the year. In addition to Italy, this cheese is produced in many other countries, like France, Germany and the United States.
