Hervé Joyaux Fabre, owner and winemaker of the Fabre Montmayou winery, was born in Bordeaux, France, and comes from a family of wine merchants. When he arrived in Argentina in the 90s, looking for investment opportunities, he was impressed by the potential of Malbec and decided to buy a vineyard in Mendoza and create a winery.

Aging : 100% of this wine is aged in French oak barrels for 12 months. Elaboration : Indentation: 20%. Weeding of the vineyard and thinning of bunches in the month of December. Manual harvest in 20 kg boxes. Double selection: from bunches and grain by grain. Fermentation: a cold maceration is carried out to achieve an optimal extraction of fruit at a controlled temperature between 27 ° C and 29º C. Four daily remontages are carried out. Long maceration of 25 days. Clarification with fresh egg whites. 750 ml / 25.4 oz:  each bottle.
