  • Elaboration: The grapes were harvested 100% manually, in plastic boxes of 20 kg. A selection of bunches was made, soft peeling, without breaking the grain, and then a selection of grains. Then the selected yeasts were sown, giving rise to the beginning of the fermentation, which was controlled between 26-28ºC for 10 days. On a daily basis, manual treads and treads of the hat were carried out, very gently, until the end of the fermentation. Subsequently the maceration continued for 15 more days.
