Powdered or confectioners' sugar is made out of finely ground sugar until it gets to a powdery state. It usually contains corn starch or potato starch in order to absorb moisture, prevent clumping and improve flow.
Direct uses and industrial applications
In industrial food production, powdered sugar is used when a quick-dissolving sugar is needed. In home-cooking recipes it is usually used to make icing, or frosting, and other cake decorations, and sometimes sprinkled over baked goods to add some sweetness and decoration.
