Category : Wines. Cellar : Salentein. Type : Red. Variety : Malbec. Cut : 100% Malbec. Origin : Mendoza, Argentina. Winemaker : José Galante - Gustavo Bauzá. Aging/Barricada : The wine was aged in the barrels for 12 months, then it was fractionated without filtering and left in bottle stowage for another 6 months. Elaboration : The grapes were harvested 100% manually, in plastic boxes of 20 kg. A selection of bunches was made, soft peeling, without breaking the grain, and then a selection of grains. Then the selected yeasts were sown, giving rise to the beginning of the fermentation, which was controlled between 26-28ºC for 10 days. On a daily basis, manual treads and treads of the hat were carried out, very gently, until the end of the fermentation. Subsequently the maceration continued for 15 more days. After this stage, the wine was bottled and immediately transferred to French oak barrels of first, second and third use, where the malolactic fermentation was carried out. 750 ml / 25.4 oz:  each bottle.
