Manual harvest in 20 kg boxes. Double selection: from bunches and grain by grain. Fermentation: a cold maceration is carried out to achieve an optimal extraction of fruit at a controlled temperature between 27 ° C and 29º C. Four daily remontages are carried out. Long maceration of 25 days. Clarification with fresh egg whites. 750 ml / 25.4 oz:  each bottle.
